Amongst many things, Japan is also well-known for its highly-developed supply chain and market for uni (sea urchin). The uni auction in Toyosu sells tens of thousands of trays of fresh uni each day and exports them all over the globe.
The main 2 types of uni are Bafun Uni and Murasaki Uni. From these 2 types, uni is available almost throughout the year since their seasons are at different times.
There are many different grades and brands of uni in Japan. We have the top brands like Hadate and Higashizawa specializing in Kita Murasaki uni with their top SP Grade trays going for more than a thousand dollars per tray at times, at the auctions. Then we have normal auction grade Narabi (straight-row arrangement) and Bara (criss-cross arrangement) trays of sea-urchin that most restaurants all over the world use.
JTC has access directly to the uni-auction so that prices are most direct.
We also have our own-house brand Hachi Uni which is produced by our CEO’s very own uni-processing factory in Hachinohe, Miyagi.
We specialise in Murasaki Uni which is available only from March to July and for this we can provide directly at better prices than what you get from the uni auction.
